Neon Cowboy Café Rides into West Wash Park with a 10-Year Lease

There’s a new kind of energy coming to West Wash Park, and I’m delighted to share it. At the corner of Logan and Alameda, in a sun-filled space with oversized windows and a lively patio, Neon Cowboy is getting ready to open its doors.

This isn’t just another neighborhood restaurant — it’s the vision of Chef Michael Sanguinetti, a certified executive chef with a career that’s taken him from the kitchens of Hawaii to the bustling food scene of Houston, and now, to Denver.

Chef Mike’s Story

Chef Mike has spent more than two decades cooking, consulting, and creating restaurant concepts across the country. He trained at the Culinary Institute of America and earned accolades along the way, including recognition from Eater Magazine and the Escoffier Society of Houston. In Houston, he helped transform The Edison into one of the city’s best cocktail bars, blending chef-driven food with craft beer and community spirit. Most recently, he led food and beverage programs for Aramark, overseeing multi-million-dollar operations and new restaurant development at iconic venues like Red Rocks Amphitheatre.

Now, with Neon Cowboy, Chef Mike is bringing that same mix of culinary creativity, community focus, and hospitality to Denver — but in a way that feels deeply personal and approachable.

The Concept

Neon Cowboy is designed as a place where you’ll want to linger at any time of day. By morning, the aroma of fresh-baked sourdough, croissants, and malasadas will spill onto the street. Midday, colorful tartines and salads keep things light and bright. By night, the vibe shifts to bold cocktails, a chef-driven dinner menu, and the kind of lively, welcoming atmosphere that Chef Mike has become known for.

The menu is playful and thoughtful at once:

  • Baked goods like crème brûlée doughnuts, Colorado brisket croissants, and housemade white chocolate brioche.

  • Tartines and brunch plates that showcase seasonal produce — think local beets with spicy walnuts and goat cheese, or sourdough banana French toast with bourbon syrup.

  • Hearty sandwiches from a bacon-and-egg croissant to a Southern-inspired BLT with jalapeño jam and green chile pimento cheese.

  • An evolving dinner menu and cocktail program, designed to keep guests coming back for something new.

It’s food with roots in tradition, but with just enough twist to feel distinctly Denver.

The Space

The restaurant’s corner location at 300 S. Logan Street offers more than just visibility — it’s a canvas for experience. Expansive windows let in natural light by day, while the glow of the interior (and yes, the neon) will make it an evening destination. A built-in bar and service counter anchor the space, and the sunny patio is sure to become a favorite gathering spot once the weather warms.

While the details of the décor are still being fine-tuned (additional inspo from Neon Cowboy is below), expect a design that balances warmth and modernity, setting the stage for everything from casual coffee catch-ups to date-night cocktails. The design and build-out are underway, and I’m eager to see the transformation!

Why This Matters for Wash Park

As someone who’s lived, worked, and eaten my way around Denver for years, I know West Wash Park has been waiting for something like this. A place that feels polished but not pretentious, casual but still intentional — the kind of neighborhood spot you can pop into multiple times a week.

I’m proud to have played a small role in helping Neon Cowboy find its home. But more than that, I’m excited to become a regular guest. With Chef Mike’s passion, the creativity of his menu, and the welcoming space he’s building, Neon Cowboy is set to be one of the most exciting openings in Denver this year.
